Ingredients

Meat

  • 2 Chicken Breast

Produce

  • 1 small Onion
  • 2 cloves Garlic
  • 50 Grams Spinach or Arugula
  • 1 Lemon

Pasta & Rice

  • ½ Cup Rice

Seasonings & Herbs

  • ½ tsp Paprika
  • ½ tsp Oregano
  • ½ tsp Basil
  • ½ tsp Onion Powder
  • ¼ tsp Red Pepper Flakes
  • 2 tbsp Chicken Oxo

Instructions
 

  • Rinse Spinach/Arugula
    Chop if you like or leave it whole
  • Wash Lemon
    Take some peel off the outside of lemon “zest” with a grater or vegetable peeler
    Juice lemon – cut in half and squeeze juice into a small cup
  • Peel and chop garlic
    Peel and chop onion
  • Chop Chicken
  • Add chicken to medium high skillet
    Add onion and garlic
    Add salt & pepper
    Cook for 4- 5 minutes
  • Add rice to skillet with chicken
    Add seasoning
    Add water
    Cover skillet with a lid and reduce heat to low
    2 person – 1 1/4 cup water
    4 person – 2 1/2 cups water
    6 person – 3  3/4 cups water
    Cook for 10-12 minutes
  • Add zest of lemon and juice
    Add Spinach
    Stir
    Enjoy!
