- 2 Chicken Breast

- 1 small Onion
- 2 cloves Garlic
- 50 Grams Spinach or Arugula
- 1 Lemon
Pasta & Rice
- ½ Cup Rice
Seasonings & Herbs
- ½ tsp Paprika
- ½ tsp Oregano
- ½ tsp Basil
- ½ tsp Onion Powder
- ¼ tsp Red Pepper Flakes
- 2 tbsp Chicken Oxo
Instructions
- Rinse Spinach/ArugulaChop if you like or leave it whole
- Wash LemonTake some peel off the outside of lemon “zest” with a grater or vegetable peelerJuice lemon – cut in half and squeeze juice into a small cup
- Peel and chop garlicPeel and chop onion
- Chop Chicken
- Add chicken to medium high skilletAdd onion and garlicAdd salt & pepperCook for 4- 5 minutes
- Add rice to skillet with chickenAdd seasoningAdd waterCover skillet with a lid and reduce heat to low2 person – 1 1/4 cup water4 person – 2 1/2 cups water6 person – 3 3/4 cups waterCook for 10-12 minutes
- Add zest of lemon and juiceAdd SpinachStirEnjoy!
