Ingredients
Meat
- 12 oz Ground Beef
Produce
- 100 grams Peas (Frozen)
- 100 grams Carrots
- 1 Onion
- 2 Clove Garlic
- 100 grams Corn
- 450 grams Potatoes
Dairy & Eggs
- 1 tbsp Butter
- ¼ cup Milk
Seasonings
- 1 tbsp Flour
- 1 tbsp Tomato Paste
- 1 tbsp Beef Broth
- 1 Bay Leaf
- 1 tsp Thyme
- 1 tsp Rosemary
- 1 tbsp Parsley
Instructions
- Preheat Oven to 350
- Peel and chop the potatoes
- Place into a pot with enough water to just cover them. Bring to a boil, reduce heat and simmer till potatoes are fork tender.
- Drain water from potatoes. Add butter, milk, salt and pepper. Mash with potato masher.
- In a large skillet brown the ground beef along with the onions, garlic, salt & pepper.
- Add the vegetables to the ground beef and cook for 5-7 minutes.
- Sprinkle flour over the beef mixture and stir.
- Add Tomato paste, beef broth and seasonings
- Add 1 cup of water for every tbsp of beef broth
- Simmer for 5 minutes till thickened
- Place beef mixture into a baking dish, remove the bay leaf.
- Top the meat with mashed potatoes
- Place into the oven for 25 minutes. Remove from oven and sprinkle with parsley.
