Ingredients

Meat

  • 12 oz Ground Beef

Produce

  • 100 grams Peas (Frozen)
  • 100 grams Carrots
  • 1 Onion
  • 2 Clove Garlic
  • 100 grams Corn
  • 450 grams Potatoes

Dairy & Eggs

  • 1 tbsp Butter
  • ¼ cup Milk

Seasonings

  • 1 tbsp Flour
  • 1 tbsp Tomato Paste
  • 1 tbsp Beef Broth
  • 1 Bay Leaf
  • 1 tsp Thyme
  • 1 tsp Rosemary
  • 1 tbsp Parsley

Instructions
 

  • Preheat Oven to 350
  • Peel and chop the potatoes
  • Place into a pot with enough water to just cover them. Bring to a boil, reduce heat and simmer till potatoes are fork tender.
  • Drain water from potatoes. Add butter, milk, salt and pepper. Mash with potato masher.
  • In a large skillet brown the ground beef along with the onions, garlic, salt & pepper.
  • Add the vegetables to the ground beef and cook for 5-7 minutes.
  • Sprinkle flour over the beef mixture and stir.
  • Add Tomato paste, beef broth and seasonings
  • Add 1 cup of water for every tbsp of beef broth
  • Simmer for 5 minutes till thickened
  • Place beef mixture into a baking dish, remove the bay leaf.
  • Top the meat with mashed potatoes
  • Place into the oven for 25 minutes. Remove from oven and sprinkle with parsley.
